Perched at 2,500 feet in Mendocino's Yorkville Highlands, Halcon Vineyard isn't wine country as most imagine it. It's a harsh, beautiful place where vines struggle against persistent winds, where mica-schist and shale soils yield just over a ton per acre, where temperatures swing wildly between hot days and frigid nights above the fogline.
Pax knows Syrah. For over two decades, he's been a leading voice for the grape in California. When he and Baron Ziegler (founder of Banshee and Marine Layer) bought Halcon in 2021, they claimed what Pax believes is “the finest Syrah site in all of California.”
The numbers back him up. Originally planted in 2005 by Paul and Jackie Gordon, these 15 acres sit above the fog line but catch the coastal wind. The soils—mica-schist, shale, and quartz—are so poor they make Hermitage Hill look fertile. The elevation creates a growing season so long and cool it rivals the Northern Rhône. Everything about this place makes the vine struggle.
The 2021 vintage was Pax and Baron's first under their ownership, and they went full Pax: 100% whole cluster fermentation, foot-crushed, native yeasts only. No hocus pocus, no extraction hijinks—just letting one of California's most extreme sites speak for itself. The result earned 96 points from Suckling and 95+ from Parker.
WHY YOU'LL LOVE IT
An Inimitable Site: At 2,500 feet, Halcon is one of California's highest vineyards. The mica-schist soils and brutal conditions create Syrah with Northern Rhône structure and California sunshine—a combination that exists nowhere else—and whole-cluster fermentation makes for sinewy, spicy backbone that means it will age GORGEOUSLY.
In His Element: After 25 years of making some of California's most distinctive Syrahs, Pax Mahle found his dream vineyard. This project is his magnum opus.
Built for the Cellar: That whole-cluster fermentation and mountain-grown structure mean this will evolve for 15+ years. At $49, you can afford to lay down a case and watch the transformation.
HOW TO SERVE IT
-
Decant for an hour —whole-cluster Syrah needs air to show its best. Serve at 60-62°F to capture both the fruit and the savory complexity.
-
Drink 2025-2040. While it's approachable now with decanting, this wine was built for aging. Give it 3-5 years and watch it transform into something truly special.
-
Perfect with grilled lamb or Prime Rib—anything that can match its intensity. The savory, herbal notes also make it brilliant with mushroom gratin or cassoulet.
